CRISPY FRIED CURRY CHICKEN

Here is a simple chicken dish that has mild curried flavour and can be adjusted according to your own tastebuds. I buy fresh chicken drunsticks for these dish as they are simple to cook and the meat is just nice and tender.

500g fresh chicken drumsticks
8tbsp of multi purpose crispy flour
1tbsp of curry powder
8tbsp of water

Marinade
60g of onion sliced
40g of ginger sliced
4 slices of galangal
5tbsp of curry spice mix
1 tbsp of tumeric powder
1 tsp salt


Firstly rub the drumsticks with salt and rinse it. Pat it dry. Add the marinade ingredients well and place in fridge for about an hour.

On a small bowl, mix the crispy flour and curry powder with water until it forms a batter. Dip the drumsticks into it and coat sides evenly. Deep fry the chicken drumsticks for about 3mins on low heat and increase to medium heat. When it is golden brown remove and drain.
