CAKE SANDWICH WITH PEANUT CREAM

I love to bake cakes for convienent snacks. There is a simple recipe for a cake with peanut butter cream sandwiched in between. I love sandwiched cakes. They are just absolutely yummy with the creams oozing out from the sides.

This recipe was given to me by my friend from school. She makes these and serves it during tea and it is also very presentable for party food.

Orange butter cakes
125g unsalted soft butter
2 eggs
half cup sugar
1 cup self raising flour
1 tsp vanilla essence
half cup fresh orange juice

Cream butter and sugar in a mixer for about 2 minutes. add in the eggs one at a time, mixing well with each addition. Add in the vanilla essence and orange juice.

Fold in flour and pipe the batter into circular shapes on baking pan lined with greaseproof paper. Bake in the low-moderate oven for about 20 minutes. Cool the circular cakes.


Peanut Butter Cream
100g cream cheese
30g butter
100g baking chocolate
half cup cream
2tbsp peanut butter (from the bottle)

Melt the butter, chocolate and cream over boiling water. Stir it consistently. When the chocolate melts, add the cream cheese, peanut butter and mix it untill it became a smooth creamy texture. Chill the cream in the fridge for an hour or more.

Pipe this chilled cream sandwich between cakes. It's really refreshingly yummy.
